Are there any "true" color SUN 3/260 monitors

All monitors are "true color", it's the frame buffer you are interested.
Most Sun frame buffers are 8 bits deep, but Sun announced a 24 bit true
color version of the Sun-4/110, called the 4/110TC, at SIGGRAPH last year.
It looked pretty good!
