We have lots of head data, only our problem seems to be your problem:

Too much data.

Do you need surface data ?

Someone here is working on conbining surface normal of surface triangle tiling
when the angles are within a certain tolerance.

How do you propose to manipulate things in real time ?  I have a head
digitizer (using a 3space digitzer that produces a constellation of landmark
points).  It does not look like a head, unless you are an anthropologist or an
orthodontists.
